Lemon Blueberry Scones

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup fresh blueberries (or frozen, thawed)

Zest of 1 lemon

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

1 tablespoon lemon juice

Extra flour for dusting

Optional: 1/2 cup powdered sugar + 2 tablespoons lemon juice for glaze

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

      Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Blueberries and Lemon Zest: Gently fold in the blueberries and lemon zest, being careful not to crush the berries.

          Mix Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and lemon juice until combined.

            Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry mixture. Stir gently until just combined; avoid overmixing as this can lead to tough scones.

              Shape the Dough: Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 1-inch thick. Cut into 8 wedges or use a round cutter for classic scone shapes.
