12 oz chickpea pasta (such as Banza or similar)

3 tbsp olive oil

4 garlic cloves, minced

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, roughly chopped

Zest of 1 lemon

Juice of 2 lemons

1/2 tsp red pepper flakes (optional, adjust to taste)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Optional garnish: additional basil leaves and lemon slices

Cook the Pasta: In a large pot, bring salted water to a boil. Add the chickpea pasta and cook according to package instructions until al dente, usually about 6-8 minutes. Once cooked, reserve 1 cup of pasta water, then drain the pasta and set aside.
