1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

1 cup whipped cream

1 ½ cups chopped Kit Kat bars (about 10-12 bars)

Chocolate ganache (optional for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.

    Prepare the Crust: In a mixing bowl, combine the chocolate cookie crumbs and melted butter until well mixed. Press the mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes, then allow to cool.

      Cheesecake Filling: In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the vanilla extract and mix until well incorporated.

        Add Eggs: With the mixer on low speed, add the eggs one at a time, mixing just until combined. Do not overmix to prevent air bubbles.

          Incorporate Sour Cream: Gently fold in the sour cream and chopped Kit Kat bars until evenly dispersed throughout the mixture.

            Pour and Bake: Pour the cheesecake batter onto the cooled crust. Smooth the top with a spatula. Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.

              Cool Down: Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.

                Chill: Once cooled, refrigerate for at least 4 hours (preferably overnight) until firm.

                  Serve: Before serving, top with whipped cream and drizzle with chocolate ganache if desired. Garnish with extra Kit Kat pieces for an added crunch.
