Ingredients
  

1 cup cooked, shredded chicken (rotisserie chicken works great!)

1/2 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese (or a blend of your choice)

1 cup corn kernels (fresh, canned, or frozen)

1/2 cup diced bell peppers (any color for fun!)

4 large flour tortillas

2 tablespoons olive oil or butter

1/2 teaspoon garlic powder (optional)

Sour cream and chopped green onions for serving (optional)

Instructions
 

Prepare the Chicken Mix:

    - In a medium bowl, combine the shredded chicken, BBQ sauce, corn, bell peppers, and garlic powder (if using). Mix well until all ingredients are evenly coated in the BBQ sauce.

      Assemble the Quesadillas:

        - Lay out the flour tortillas on a flat surface. On one half of each tortilla, sprinkle a generous amount of shredded cheddar cheese, followed by a scoop of the BBQ chicken mixture. Top with a bit more cheese to help seal the quesadilla when folded.

          Fold the Quesadillas:

            - Carefully fold the tortilla in half, covering the chicken mixture, and press down gently to seal.

              Cook the Quesadillas:

                - Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Once hot, place 2 quesadillas in the skillet (or cook them one at a time, depending on the skillet size). Cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese has melted.

                  Slice and Serve:

                    - Remove the quesadillas from the skillet and let them cool slightly. Cut each quesadilla into wedges and serve with sour cream and chopped green onions on the side.
