8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup crumbled bacon (cooked)

2-3 fresh jalapeños, seeds removed and finely chopped

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp salt

1/4 tsp black pepper

4 large flour tortillas

1/2 cup green onion, finely chopped (optional for garnish)

Cooking spray or olive oil, for baking

Prepare the Filling: In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until everything is well incorporated into a smooth filling.

    Assemble the Pinwheels: Place one tortilla on a clean, flat surface. Spread a generous layer of the jalapeño popper filling evenly over the tortilla, leaving a small edge around the sides.

      Roll it Up: Starting from one end, tightly roll the tortilla over the filling to create a log. Make sure to roll it as tightly as possible without squeezing out the filling. Repeat this process with the remaining tortillas and filling.

        Chill the Rolls: Once all tortillas are filled and rolled, wrap them in plastic wrap and refrigerate for at least 30 minutes. This helps the pinwheels hold their shape and makes them easier to slice.

          Slice the Pinwheels: After chilling, remove the rolls from the refrigerator and unwrap them. Use a sharp knife to slice each roll into 1-inch thick pinwheels.

            Bake (optional): If you prefer a warm and crispy version, preheat your oven to 375°F (190°C). Place the pinwheels on a baking sheet lined with parchment paper, spray lightly with cooking spray or drizzle with olive oil, and bake for 15-20 minutes, or until golden brown and crispy.
