Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, chilled and cubed

1 cup sharp cheddar cheese, shredded

1/2 cup pickled jalapeños, chopped (adjust according to your spice preference)

1/4 cup buttermilk

1 large egg

1 tablespoon honey (optional, for a touch of sweetness)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

Cut in Butter: Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, mix until the mixture resembles coarse crumbs.

Add Cheese and Jalapeños: Stir in the shredded cheddar cheese and chopped jalapeños until evenly distributed throughout the flour mixture.

Combine Wet Ingredients: In a separate small bowl, whisk together the buttermilk, egg, and honey (if using).

Mix Wet and Dry: Pour the wet ingredients into the dry mixture. Gently mix with a fork or spatula until just combined. Be careful not to overwork the dough.

Form the Biscuits: Turn the dough out onto a lightly floured surface. Gently pat it into a rectangle about 1-inch thick. Use a biscuit cutter or a sharp knife to cut out biscuits (you can also use a round cutter for traditional shapes). Re-form the leftover dough to cut additional biscuits.

Bake: Place the biscuits on the lined baking sheet. Bake in the preheated oven for 12-15 minutes, or until they are lightly golden on top and cooked through.

Cool and Serve: Allow the biscuits to cool on a wire rack for a few minutes before serving. They are delicious warm on their own or slathered with butter!
