Italian Pasta Salad Skewers

Ingredients
  

8 oz corkscrew pasta (cavatappi or fusilli)

1 cup cherry tomatoes, halved

1 cup mini mozzarella balls (bocconcini)

1 cup sliced pepperoni or salami, cut into quarters

1 cup diced cucumber

½ cup black olives, pitted and halved

¼ cup red onion, finely chopped

¼ cup fresh basil leaves

½ cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Skewers (wooden or reusable metal)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the corkscrew pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare Ingredients: While the pasta cools, wash and cut the cherry tomatoes in half, slice the pepperoni or salami, dice the cucumber, and halve the olives. Set all ingredients aside.

      Mix Dressing: In a large mixing bowl, combine the cooked pasta with cherry tomatoes, mozzarella balls, pepperoni or salami, cucumber, olives, and red onion. Drizzle the Italian dressing over the top and gently toss everything to coat. Season with salt and pepper to taste.

        Assemble Skewers: Take a skewer and begin layering the salad ingredients. Start with a cherry tomato, followed by a mozzarella ball, a piece of salami, a cucumber slice, an olive, and a basil leaf. Repeat the layers until the skewer is filled, leaving some space at the bottom for handling.

          Serve: Once all the skewers are assembled, place them on a serving platter. Drizzle a little extra dressing over the top if desired. Garnish with additional basil leaves for a fresh touch.

            Chill (Optional): For an enhanced flavor, cover the skewers with plastic wrap and let them chill in the refrigerator for at least 30 minutes before serving.
