1/2 cup popcorn kernels (about 16 cups popped popcorn)

1/2 cup unsalted butter

1 cup brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon kosher salt

1 teaspoon vanilla extract

1/4 teaspoon baking soda

Optional: 1/2 cup chopped nuts (pecans or walnuts) for added crunch

Instructions
 

Pop the Popcorn:

    - Using an air popper or stovetop method, pop the popcorn kernels. If using the stovetop, heat a large pot over medium heat, add the kernels, and cover. Shake occasionally until popping slows. Once popped, transfer to a large bowl and remove any unpopped kernels.

      Make the Brown Butter:

        - In a medium saucepan over medium heat, add the unsalted butter. Allow it to melt, then continue cooking, swirling the pan occasionally. The butter will begin to foam and then turn golden brown with a nutty aroma, usually takes about 5-7 minutes. Keep a close eye to avoid burning.

          Combine Sugar and Spices:

            - In a small bowl, mix the brown sugar, ground cinnamon, and kosher salt together. Set aside.

              Mix the Caramel:

                - Once the butter is browned, remove it from heat and immediately add in the sugar mixture and vanilla extract. Stir until the brown sugar is completely dissolved. Then, add the baking soda to the caramel mixture—this will cause it to bubble and foam slightly, which is normal.

                  Combine Popcorn and Caramel:

                    - Drizzle the warm brown butter caramel over the popped popcorn while gently tossing with a spatula to coat evenly. If using nuts, add them at this stage to mix in with the popcorn.

                      Bake for Crunch:

                          Cool and Serve:
