1 lb large shrimp, peeled and deveined

1 cup walnuts

1/2 cup cornstarch

1/2 cup all-purpose flour

2 eggs, beaten

1/2 cup mayonnaise

1/4 cup honey

1 tbsp lemon juice

1 tsp sesame oil

1/2 tsp salt

1/4 tsp ground white pepper

Vegetable oil for frying

Chopped green onions (for garnish)

Prepare the Walnuts: In a small pan, toast the walnuts over medium heat until they are golden and fragrant, about 3-5 minutes. Stir frequently to ensure even toasting. Remove from heat and let them cool.

    Make the Sauce: In a bowl, mix together the mayonnaise, honey, lemon juice, sesame oil, salt, and white pepper until smooth. Taste and adjust the sweetness or acidity if necessary. Set aside.

      Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. This is important for the coating to stick properly.

        Coat the Shrimp: In one bowl, combine the cornstarch and flour. In another bowl, have the beaten eggs ready. Dredge each shrimp first in the cornstarch-flour mixture, shaking off any excess, then dip it into the beaten eggs until fully coated.

          Fry the Shrimp: In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat (approximately 350°F). Fry the shrimp in batches, making sure not to overcrowd the pan, until they are golden brown and cooked through, about 3-4 minutes per batch. Remove the shrimp and let them drain on paper towels.

            Combine It All: In a large bowl, gently toss the fried shrimp with the honey sauce until they are well coated. Carefully fold in the toasted walnuts.

              Serve: Plate the honey walnut shrimp, garnishing with chopped green onions for a pop of color and added freshness.
