1 lb large shrimp (peeled and deveined)

1 cup walnuts

1 cup cornstarch

2 large egg whites

1 cup mayonnaise

1/2 cup honey

2 tbsp sweetened condensed milk

1 tsp lemon juice

1 tsp vanilla extract

Pinch of salt

Oil for frying (vegetable or canola)

Fresh chopped parsley (for garnish, optional)

Prepare the Walnuts: In a saucepan, bring about 1 cup of water to a boil. Add the walnuts and boil for 2-3 minutes. Drain and rinse the walnuts under cold water. Return to the pan and add 1/2 cup of sugar and enough water to cover. Bring to a gentle boil and let simmer for about 5 minutes until the walnuts are coated in sugar. Strain the walnuts and spread them out on a parchment-lined baking sheet. Let them cool and harden.

    Whisk the Batter: In a mixing bowl, whisk together the egg whites and a pinch of salt until slightly frothy. Gradually add the cornstarch, mixing until smooth and well combined.

      Coat the Shrimp: Dip each shrimp into the egg white mixture, ensuring they are well-coated, then dredge them in cornstarch until fully covered. Shake off excess cornstarch.

        Heat the Oil: In a large skillet or deep fryer, heat oil over medium-high heat. The oil should be at least 350°F (175°C) for frying.

          Fry the Shrimp: Carefully add the coated shrimp to the hot oil in batches, being careful not to overcrowd. Fry for 2-3 minutes or until golden and crispy. Remove the shrimp and drain on paper towels.

            Make the Sauce: In a bowl, combine the mayonnaise, honey, sweetened condensed milk, lemon juice, and vanilla extract. Mix until smooth and well combined.

              Toss the Shrimp: In a large mixing bowl, gently toss the fried shrimp with the honey sauce until evenly coated.
