Honey Soy Glazed Salmon with Rice

Ingredients
  

4 salmon fillets (6 oz each)

1/4 cup soy sauce (low sodium)

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon cornstarch

1 tablespoon water

Salt and pepper to taste

2 cups jasmine rice

4 cups water or low-sodium chicken broth

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Optional: steamed vegetables (broccoli, snap peas) for serving

Instructions
 

Prepare the Marinade: In a mixing bowl, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a zip-top bag and pour half of the marinade over the salmon. Reserve the other half for glazing. Allow the salmon to marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water (or chicken broth). Bring to a boil, then reduce heat to low, cover, and cook for about 15-18 minutes, or until rice is tender and the liquid is absorbed. Fluff with a fork and keep covered until serving.

        Prepare the Glaze: In a small saucepan, take the reserved marinade and bring it to a gentle boil. In a small bowl, combine the cornstarch with water to create a slurry. Slowly whisk the slurry into the boiling marinade, continuing to whisk until the sauce thickens (about 2-3 minutes). Remove from heat.

          Cook the Salmon: Preheat the grill or a skillet over medium-high heat. Lightly oil the grill grates or the skillet. Remove the salmon from the marinade and season with salt and pepper. Place the fillets skin side down on the grill or skillet. Cook for about 4-5 minutes per side, basting with the glaze, until the salmon is cooked to desired doneness and flakes easily with a fork.

            To Serve: Divide the cooked rice among plates, top with a salmon fillet, and drizzle with the thickened honey soy glaze. Garnish with sliced green onions and sesame seeds. If desired, serve with steamed vegetables on the side.
