For the crust:

1 ½ cups crushed phyllo pastry

½ cup unsalted butter, melted

1/4 cup granulated sugar

1/2 teaspoon ground cinnamon

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1 cup Greek yogurt

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup finely chopped pistachios

For the honey syrup:

1/2 cup honey

1/4 cup water

1 teaspoon vanilla extract

1 tablespoon lemon juice

For the topping:

1/2 cup pistachios, roughly chopped

1 teaspoon ground cinnamon

Additional honey for drizzling

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix the crushed phyllo pastry with melted butter, sugar, and ground cinnamon until everything is well combined.

        - Press the mixture into the bottom of a 9-inch springform pan to create an even layer. Bake for 10-12 minutes until golden. Remove from the oven and let it cool while you prepare the filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese and Greek yogurt until smooth and creamy.

              - Gradually add in the sugar, followed by the eggs, vanilla extract, and salt. Mix until fully incorporated.

                - Gently fold in the finely chopped pistachios.

                  Assemble the Cheesecake:

                    - Pour the cheesecake filling over the cooled phyllo crust, smoothing the top with a spatula.

                      - Bake in the preheated oven for 45-50 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door open for about 30 minutes to let the cheesecake cool gradually.

                        Prepare the Honey Syrup:

                          - In a small saucepan, combine honey, water, vanilla extract, and lemon juice. Bring to a gentle boil, then reduce the heat and simmer for about 5 minutes until slightly thickened. Remove from heat and let cool.

                            Chill the Cheesecake:

                              - Once the cheesecake has cooled to room temperature, refrigerate it for at least 4 hours, preferably overnight to set completely.

                                Add the Topping and Serve:

                                  - Before serving, mix the roughly chopped pistachios with ground cinnamon. Sprinkle this mixture over the top of the cheesecake.
