Honey Mustard Sheet Pan Pork Chops

4 bone-in pork chops (about 1 inch thick)

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

1 lb baby potatoes, halved

2 cups fresh green beans, trimmed

Optional: lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    Prepare the Marinade: In a medium bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, smoked paprika, dried thyme, salt, and pepper.

      Marinate the Pork Chops: Place the pork chops in a resealable plastic bag or a shallow dish. Pour half of the honey mustard marinade over the pork chops, ensuring they are fully coated. Reserve the other half of the marinade for later. Allow the pork to marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor.

        Prep the Vegetables: While the pork is marinating, prepare the vegetables. In a large bowl, toss the halved baby potatoes and green beans with olive oil, salt, and pepper to taste.

          Arrange on Baking Sheet: Arrange the marinated pork chops in the center of the prepared baking sheet. Scatter the potatoes around the pork chops, and add the green beans to the mixture as well. Drizzle any remaining marinade from the bowl on top.

            Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the vegetables are tender and golden brown.

              Serve: Once out of the oven, let the pork chops rest for about 5 minutes. Serve the pork chops and vegetables hot, drizzled with the reserved honey mustard sauce. Garnish with lemon wedges if desired.
