1 lb ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Honey Garlic Glaze:

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 tablespoon minced garlic

1/2 teaspoon ground black pepper

1 teaspoon sesame oil (optional for depth of flavor)

Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or mini loaf pan.

    Mix Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, egg, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper. Mix until all ingredients are well incorporated, but don't overwork the meat.

      Shape Meatloaf Minis: Divide the meat mixture evenly into 12 portions and shape each portion into a small loaf. If using a muffin tin, just press the mixture into the cups.

        Prepare Glaze: In a small saucepan over medium heat, whisk together the honey, soy sauce, apple cider vinegar, minced garlic, black pepper, and sesame oil. Bring the mixture to a gentle simmer and cook for about 3-4 minutes until slightly thickened. Remove from heat.

          Glaze the Meatloaf: Brush a generous amount of the honey garlic glaze over each meatloaf mini, reserving some glaze for later basting.
