Ingredients

1 ½ lbs boneless, skinless chicken thighs

¼ cup honey

¼ cup soy sauce (preferably low-sodium)

4 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp rice vinegar or apple cider vinegar

1 tbsp sesame oil

½ tsp black pepper

1 tsp red pepper flakes (optional for heat)

2 green onions, chopped (for garnish)

1 tbsp sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, vinegar, sesame oil, black pepper, and red pepper flakes (if using). This will be the marinade for the chicken.

Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Ensure the chicken is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or ideally 2-4 hours for deeper flavor.

Preheat the Pan: In a large skillet or frying pan, heat a tablespoon of oil over medium-high heat. Once hot, add the marinated chicken (reserving the marinade) to the pan.

Sear the Chicken: Cook the chicken for about 5-6 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and set it aside.

Make the Sauce: In the same pan, pour the reserved marinade. Bring it to a boil and then reduce the heat to simmer, allowing it to thicken slightly (about 3-5 minutes). Stir occasionally to prevent burning.

Glaze the Chicken: Return the cooked chicken to the pan and coat it in the thickened sauce. Cook for an additional 2-3 minutes, allowing the sauce to cling to the chicken.

Serve: Remove from heat and let it cool for a minute. Garnish with chopped green onions and sesame seeds. Serve over cooked rice or quinoa to soak up that delicious honey garlic sauce.
