Homemade Peach Pizza

For the Dough:

2 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¾ cup warm water (110°F)

1 tbsp sugar

1 tsp salt

1 tbsp olive oil

For the Toppings:

3 ripe peaches, sliced

1 cup mozzarella cheese, shredded

½ cup goat cheese, crumbled (optional)

½ cup balsamic glaze

Fresh basil leaves, for garnish

Olive oil, for drizzling

Salt and pepper, to taste

Instructions
 

Make the Dough:

    - In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

      - In a large mixing bowl, combine the flour and salt. Make a well in the center, then pour in the yeast mixture and olive oil.

        - Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.

          First Rise:

            - Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

              Prepare the Peaches:

                - While the dough is rising, wash and slice the peaches. Set them aside. If you like, toss them with a sprinkle of salt and pepper for added flavor.

                  Preheat the Oven:

                    - Preheat your oven to 475°F (245°C). If you're using a pizza stone, place it in the oven to heat as well.

                      Shape the Dough:

                        - Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness (about 12 inches in diameter works well).

                          Add the Sauce and Cheese:

                            - Place the rolled-out dough onto a pizza peel or baking sheet. Drizzle a little olive oil over the dough and sprinkle mozzarella cheese evenly.

                              - Arrange the peach slices artfully over the cheese. If using, scatter crumbled goat cheese on top.

                                Bake the Pizza:

                                  - Carefully transfer the pizza to the preheated oven (or pizza stone) and bake for 12-15 minutes or until the crust is golden and the cheese is bubbling.

                                    Finish with Balsamic Glaze:

                                      - After baking, remove the pizza from the oven and immediately drizzle balsamic glaze over the top. Add fresh basil leaves for garnish.

                                        Slice and Serve:

                                          - Let cool for a couple of minutes, slice the pizza, and serve warm. Enjoy your unique peach-infused creation!
