Herb Crusted Baked Cod

4 cod fillets (6 ounces each)

1 cup fresh parsley, chopped

1/2 cup fresh chives, chopped

1/4 cup fresh dill, chopped

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper, to taste

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Herb Mixture: In a large mixing bowl, combine the chopped parsley, chives, dill, panko breadcrumbs, grated Parmesan cheese, minced garlic, lemon zest, and salt and pepper. Mix well to combine all the ingredients.

      Add Olive Oil: Drizzle in the olive oil and mix until the herb and breadcrumb mixture is evenly coated and resembles wet sand.

        Prepare the Cod: Pat the cod fillets dry with a paper towel. Season both sides of each fillet lightly with salt and pepper. Squeeze lemon juice over the fish.

          Crust the Fillets: Place the cod fillets on the prepared baking sheet, skin side down (if skin-on). Generously press the herb crust mixture onto the top of each fillet, ensuring an even coating.

            Bake the Cod: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the cod is opaque and flakes easily with a fork. The crust should be golden brown.

              Serve: Remove from the oven and let sit for a minute. Serve the baked cod with lemon wedges on the side for extra flavor.
