1 medium head of cauliflower, chopped into florets

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, chopped

4 cups vegetable broth

1 cup unsweetened almond milk (or any milk of your choice)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup sharp cheddar cheese, shredded (or dairy-free cheese)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add Cauliflower: Add the cauliflower florets to the pot, along with the vegetable broth, thyme, paprika, salt, and pepper. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the cauliflower is tender.

      Blend the Soup: Remove the pot from the heat and use an immersion blender to blend the soup until it’s smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.

        Incorporate Milk and Cheese: Return the blended soup to the pot over low heat. Stir in the almond milk and let it warm through. Gradually add the shredded cheddar cheese, stirring continuously until melted. Adjust seasoning as needed.
