1 can (15 oz) chickpeas, rinsed and drained

1 large cucumber, diced

1 red bell pepper, diced

½ red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup fresh parsley, chopped

2 tablespoons lemon juice

1 tablespoon olive oil

1 teaspoon cumin

Salt and pepper, to taste

4 large whole wheat or spinach wraps

Optional: ¼ cup feta cheese or vegan cheese (for a non-vegan option)

Instructions
 

Prepare the Chickpeas: In a large mixing bowl, add the rinsed and drained chickpeas. Using the back of a fork, mash them lightly, leaving some whole for texture.

    Combine Vegetables: Add the diced cucumber, red bell pepper, red onion, cherry tomatoes, avocado, and parsley to the chickpeas.

      Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, cumin, salt, and pepper. Adjust seasonings to taste.

        Mix Everything: Pour the dressing over the chickpea and vegetable mixture. Toss gently until all ingredients are well combined.
