2 cups rolled oats

1 cup unsweetened applesauce

1 cup fresh or frozen blueberries

1/2 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup

1/4 cup chopped nuts (e.g., walnuts or almonds)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup dark chocolate chips or coconut flakes for added flavor

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the unsweetened applesauce, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well-blended.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, chopped nuts, cinnamon, and salt together until thoroughly combined.

        Incorporate Ingredients: Gradually add the dry mixture to the wet mixture, stirring until just combined. Gently fold in the blueberries, being careful not to mash them too much.

          Spread the Mixture: Pour the oat mixture into the prepared baking dish, pressing it down firmly and evenly into the corners with a spatula or your hands.

            Bake: Bake in the preheated oven for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Cool: Once baked, allow the bars to cool in the pan for about 10 minutes before using the parchment overhang to remove them from the pan. Transfer to a wire rack to cool completely.

                Cut and Store: Once fully cooled, cut into 10-12 bars. Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
