2 cups elbow macaroni

1 cup mayonnaise (preferably Hawaiian-style)

1/4 cup sour cream

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1/2 cup diced celery

1/2 cup diced red bell pepper

1/2 cup grated carrots

1/4 cup finely chopped green onions

3/4 cup diced cooked ham or Spam (optional)

Salt and pepper to taste

1/4 teaspoon garlic powder (optional)

1/4 teaspoon paprika (for garnish)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain, rinse under cold water, and set aside to cool completely.

    Prepare the Dressing: In a mixing bowl, combine the mayonnaise, sour cream, apple cider vinegar, and Dijon mustard. Whisk until smooth and creamy. Adjust seasoning with salt, pepper, garlic powder, and stir well.

      Mix the Salad Ingredients: In a large bowl, add the cooled macaroni, diced celery, red bell pepper, grated carrots, green onions, and diced ham or Spam (if using).

        Combine and Chill: Pour the dressing over the macaroni salad mixture and stir until all ingredients are evenly coated. Taste and adjust seasoning if necessary. Cover and refrigerate for at least 2 hours to allow the flavors to meld.
