1 lb ground turkey

1 cup cooked jasmine rice

1/2 cup Hatch green chiles, diced (fresh or canned)

1/2 cup black beans, drained and rinsed

1 cup baby spinach, chopped

1/2 cup shredded Monterey Jack cheese

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

4 large flour tortillas or lettuce wraps

Optional toppings: Avocado slices, sour cream, or salsa

Instructions
 

Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the ground turkey and cook until it’s browned and no longer pink, breaking it apart with a spatula (about 5-7 minutes).

    Season the Mixture: Stir in the diced Hatch green chiles, cumin, garlic powder, salt, and pepper. Incorporate the black beans and cook for an additional 3-4 minutes, allowing the flavors to meld.
