1 lb chicken breast, diced into bite-sized pieces

1 cup long-grain white rice

2 cups chicken broth

1 cup hatch green chilies, chopped (fresh or canned)

1 medium onion, diced

3 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 tsp cumin

1 tsp smoked paprika

½ tsp oregano

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

½ cup shredded cheddar cheese (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Cook the Chicken: Add the diced chicken breast to the skillet. Season with cumin, smoked paprika, oregano, salt, and black pepper. Cook until the chicken is no longer pink, about 5-6 minutes.

      Add Garlic and Chilies: Stir in the minced garlic and chopped hatch green chilies. Cook for an additional 2 minutes until the garlic is fragrant.

        Add Rice and Broth: Pour in the rice and chicken broth, stirring well to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 15-20 minutes or until the rice is cooked and has absorbed the liquid.

          Mix in Corn: Once the rice is fully cooked, gently fold in the corn kernels and let them heat through, about 2-3 minutes.

            Cheese It Up: If using, sprinkle the cheddar cheese over the top of the skillet. Cover again for a minute or two until the cheese is melted.
