6 large eggs

1 cup milk

1 cup shredded sharp cheddar cheese

1 cup diced Hatch green chiles (fresh or canned)

1 cup diced bell peppers (any color)

1 cup diced onions

1 cup cubed crusty bread (such as sourdough)

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced onions and bell peppers. Sauté for about 5 minutes, or until the onions are translucent. Stir in the diced Hatch green chiles and cook for another 2-3 minutes. Remove from heat and let it cool slightly.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk. Stir in the garlic powder, paprika, cumin, salt, and pepper until well combined.

        Combine Ingredients: In the prepared baking dish, layer the cubed bread evenly across the bottom. Add the sautéed vegetable and Hatch chili mixture on top of the bread. Pour the egg mixture over the entire dish, ensuring everything is well coated. Finally, sprinkle the shredded cheddar cheese on top.

          Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
