1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

8 oz mushrooms, sliced (preferably cremini or button)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 tablespoon all-purpose flour

1 cup sour cream

2 tablespoons olive oil

Salt and pepper to taste

8 oz egg noodles or any pasta of your choice

Fresh parsley, chopped (for garnish)

Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the ground beef. Season with salt and pepper, and cook until browned, breaking it up with a spatula (about 5-7 minutes). Drain excess fat if necessary.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add diced onion and cook until soft, about 5 minutes. Stir in minced garlic and mushrooms and sauté for an additional 5-7 minutes, until the mushrooms are tender.

        Make the Sauce: Sprinkle the flour over the beef and vegetable mixture, stirring well to coat. Cook for 1-2 minutes before adding beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine and reduce heat to low. Allow the mixture to simmer for about 5 minutes until slightly thickened.

          Add the Sour Cream: Once the sauce has thickened, remove the skillet from heat and stir in the sour cream until fully combined. Taste and adjust seasoning with salt and pepper as desired.
