Grilled Zucchini Halloumi Stacks

2 medium zucchini, sliced into 1/4-inch thick rounds

8 ounces halloumi cheese, sliced into 1/4-inch thick slices

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling (optional)

Instructions
 

Marinate the Zucchini: In a large bowl, combine the sliced zucchini with 1 tablespoon of olive oil, garlic powder, smoked paprika, salt, and pepper. Toss well to ensure all zucchini slices are evenly coated. Let them marinate for about 15-20 minutes.

    Prepare the Halloumi: While the zucchini marinates, brush the halloumi slices with the remaining tablespoon of olive oil, and season lightly with salt and pepper.

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat. If using a grill pan, you may want to lightly oil the surface to prevent sticking.

        Grill the Zucchini: Place the marinated zucchini slices on the grill and cook for about 2-3 minutes on each side, or until grill marks appear and they are tender. Remove from the grill and set aside.

          Grill the Halloumi: Next, grill the halloumi slices for about 2 minutes on each side, until golden brown and slightly melted. Be careful not to overcook, as halloumi can become too rubbery.

            Assemble the Stacks: On a serving platter, start stacking your grilled zucchini and halloumi. Alternate layers—begin with a slice of zucchini, add a slice of halloumi, then a second zucchini slice. Repeat until all ingredients are used, finishing with a halloumi slice on top.

              Garnish and Serve: Drizzle the stacks with balsamic glaze (if desired) and top with fresh basil leaves for a burst of flavor. Serve immediately while warm.
