Grilled Zucchini and Halloumi

2 medium zucchinis, sliced into 1/2-inch thick rounds

250g halloumi cheese, sliced into 1/2-inch thick slices

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

1 clove garlic, minced

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Zucchini: In a large bowl, combine the olive oil, balsamic vinegar, dried oregano, minced garlic, salt, and pepper. Add the zucchini slices and toss to coat. Let marinate for at least 15 minutes to allow the flavors to meld.

    Preheat the Grill: Preheat your grill or grill pan to medium-high heat. Make sure it’s well-greased to prevent sticking.

      Grill the Zucchini: Place the marinated zucchini slices on the grill. Grill for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.

        Grill the Halloumi: On the same grill, add the halloumi slices. Grill for 2-3 minutes on each side until golden and slightly crispy. Be attentive, as halloumi can burn quickly.

          Assemble the Dish: On a serving platter, arrange the grilled zucchini and halloumi. Drizzle any leftover olive oil marinade over the top for added flavor.

            Garnish and Serve: Sprinkle the grilled dish with fresh chopped parsley and serve with lemon wedges on the side for squeezing over just before eating.
