For the Avocado Corn Salsa:

1 cup fresh corn kernels (or canned/frozen, thawed)

1 ripe avocado, diced

1 medium red onion, finely chopped

1 small jalapeño, seeds removed and minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Sauce:

1/2 cup Greek yogurt

1 tablespoon mayonnaise

1 tablespoon lime juice

1 teaspoon honey

1/2 teaspoon garlic powder

Salt and pepper to taste

For Serving:

2 cups cooked quinoa or rice

Lime wedges and additional cilantro for garnish

Marinate the Shrimp: In a large bowl, combine the olive oil, smoked paprika, garlic powder, lime zest, salt, and pepper. Add the shrimp and toss to coat evenly. Let marinate for at least 20 minutes at room temperature or up to 1 hour in the refrigerator.
