Grilled Salmon with Pineapple Salsa

For the Grilled Salmon:

4 salmon fillets (6 oz each)

2 tablespoons olive oil

1 tablespoon honey

2 teaspoons soy sauce

1 teaspoon garlic powder

1 teaspoon ground black pepper

1 teaspoon salt

Juice of 1 lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Marinate the Salmon:

    - In a small bowl, whisk together the olive oil, honey, soy sauce, garlic powder, black pepper, salt, and lime juice.

      - Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes to 1 hour to allow the flavors to meld.

        Prepare the Pineapple Salsa:

          - In a medium-sized bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño (if using), and cilantro.

            - Squeeze the juice of one lime over the mixture and season with salt and pepper to taste. Mix well and set aside to let the flavors develop.

              Preheat the Grill:

                - Preheat your grill to medium-high heat (about 400°F/200°C). If using a charcoal grill, make sure the coals are hot and glowing.

                  Grill the Salmon:

                    - Once the grill is ready, lightly oil the grill grates to prevent sticking.

                      - Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 5-6 minutes.

                        - Carefully flip the fillets using a spatula and grill the other side for an additional 4-5 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

                          Serve:

                            - Once cooked, remove the salmon from the grill and let it rest for a couple of minutes.

                              - Serve the grilled salmon on plates topped generously with the fresh pineapple salsa.

                                - Garnish with additional lime wedges and cilantro if desired.
