Grilled Peach & Burrata Salad

Ingredients
  

4 ripe peaches, halved and pitted

8 ounces burrata cheese

5 cups mixed greens (arugula, spinach, and baby kale)

¼ cup extra virgin olive oil

2 tablespoons balsamic glaze

1 tablespoon honey

¼ cup toasted walnuts, roughly chopped

Fresh basil leaves, for garnish

Salt and pepper, to taste

Instructions
 

Preheat the Grill: Heat your grill (or grill pan) over medium-high heat.

    Prepare the Peaches: Brush the cut sides of the peach halves with a small amount of olive oil. This will prevent sticking and add flavor.

      Grill the Peaches: Place the peaches cut-side down on the grill and cook for about 4-6 minutes, or until grill marks appear and they’re slightly softened. Turn and grill for another 2 minutes. Remove from heat and let cool slightly.

        Make the Dressing: In a small bowl, whisk together the remaining olive oil, balsamic glaze, honey, and a pinch of salt and pepper until well combined.

          Assemble the Salad: On a large serving platter or in individual bowls, add a bed of mixed greens. Tear or slice the burrata into chunks and place it evenly over the greens.

            Add Grilled Peaches: Arrange the grilled peach halves on top of the burrata and mixed greens.

              Garnish: Sprinkle the toasted walnuts over the salad and add fresh basil leaves for garnish.
