Grilled Flatbread Pizza

2 large flatbreads (store-bought or homemade)

1 cup pizza sauce (your favorite brand or homemade)

2 cups shredded mozzarella cheese

1 cup colorful bell peppers, thinly sliced

½ cup red onion, thinly sliced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 teaspoon Italian seasoning

½ teaspoon garlic powder

Olive oil for brushing

Fresh basil leaves, for garnish

Red pepper flakes (optional, for spice)

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat, about 400°F (200°C). If using a charcoal grill, wait until the coals are hot and covered with ash.

    Prepare the Flatbreads: Brush both sides of the flatbreads with olive oil to prevent sticking and achieve a nice grill mark. Season one side with garlic powder and Italian seasoning.

      Grill the Flatbreads: Place the flatbreads on the grill, seasoned side down. Grill for about 2-3 minutes or until grill marks form. Flip the flatbreads and let grill on the other side for another 2-3 minutes. Remove from heat and set aside.

        Assemble the Pizza: On the grilled side of each flatbread, spread a generous layer of pizza sauce. Top with shredded mozzarella cheese, followed by bell peppers, red onion, cherry tomatoes, and fresh spinach. You can sprinkle additional Italian seasoning on top, if desired.

          Grill the Pizza: Carefully return the topped flatbreads to the grill. Close the lid and grill for an additional 4-6 minutes, or until the cheese is melted and bubbly, watching closely to avoid burning.

            Garnish and Serve: Once the pizza is ready, remove the flatbreads from the grill. Allow them to cool slightly, then garnish with fresh basil leaves and sprinkle with red pepper flakes for extra heat, if you like. Slice into pieces and enjoy!
