4 slices of sourdough bread

1 cup fig jam

4 oz creamy goat cheese, softened

4 oz sharp white cheddar cheese, grated

2 tbsp unsalted butter, room temperature

1 tsp fresh thyme leaves (optional)

1/4 tsp black pepper

1/4 tsp sea salt

Prep the Bread: Start by spreading a thin layer of softened butter on one side of each of the bread slices. This will help create a golden, crispy crust when grilled.

    Assemble the Sandwich: On the unbuttered side of two bread slices, spread a generous layer of fig jam over the entire surface.

      Add Cheeses: Evenly spread the softened goat cheese on top of the fig jam, followed by a sprinkle of black pepper and sea salt. Sprinkle fresh thyme leaves if using. Top with the grated sharp white cheddar.
