Grilled Corn Pasta Salad

8 oz farfalle (bow-tie) pasta

2 cups fresh corn kernels (about 4 ears of corn)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

½ cup feta cheese, crumbled (optional)

¼ cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon lime juice

1 teaspoon honey

Salt and pepper to taste

Red pepper flakes (optional for some heat)

Instructions
 

Cook the pasta: Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking. Set aside.

    Grill the corn: Preheat your grill to medium-high heat. Husk the ears of corn and lightly brush the outside with olive oil. Grill the corn for about 10-15 minutes, turning occasionally, until charred and tender. Remove from grill and let cool. Once cooled, cut the kernels off the cob into a bowl.

      Prepare the dressing: In a small bowl, whisk together olive oil, apple cider vinegar, lime juice, honey, salt, and pepper until well combined. Adjust to taste.

        Combine ingredients: In a large mixing bowl, combine the cooked pasta, grilled corn, diced red bell pepper, cherry tomatoes, avocado, red onion, and cilantro. If you’re using feta cheese, gently fold that in as well.

          Dress the salad: Pour the dressing over the salad mixture and toss gently to combine everything evenly. Add salt, pepper, and red pepper flakes to taste.

            Chill and serve: Allow the pasta salad to sit for at least 30 minutes in the refrigerator for the flavors to meld together before serving. Enjoy chilled or at room temperature!
