2 ears of fresh corn, husked

1 ripe avocado, diced

1 medium red onion, finely chopped

1 medium red bell pepper, diced

1 jalapeño, seeded and minced (optional, for heat)

Juice of 2 limes

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Salt and pepper to taste

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

    Grill the Corn: Place the husked corn directly on the grill grates. Grill for about 10-12 minutes, turning occasionally, until the corn is lightly charred and cooked through. Remove from the grill and let it cool slightly.

      Prepare the Salsa Base: While the corn is cooling, in a large mixing bowl, combine the diced avocado, chopped red onion, diced red bell pepper, and minced jalapeño (if using).

        Cut the Corn Kernels: Once the corn is cool enough to handle, carefully slice the kernels off the cob using a sharp knife. Add the grilled corn to the mixing bowl.

          Dress the Salsa: Drizzle the mixture with fresh lime juice and olive oil. Add the chopped cilantro, and season with salt and pepper to taste. Gently toss everything together to combine, being careful not to mash the avocado.
