3 tablespoons olive oil

2 limes (juice and zest)

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper (adjust for heat preference)

8 small corn tortillas

1 cup fresh cilantro, chopped

1 cup diced red onion

1 cup diced tomatoes

1 avocado, sliced

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, lime juice, lime zest, minced garlic, cumin, chili powder, smoked paprika, salt, black pepper, and cayenne pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the fridge for at least 30 minutes to 1 hour.
