Grilled Chicken Peach Salad

2 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

4 cups mixed salad greens (baby spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

½ cup crumbled feta cheese

¼ cup thinly sliced red onion

¼ cup walnuts, toasted

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Marinate the Chicken: In a small bowl, whisk together 2 tablespoons of olive oil, salt, and pepper. Coat the chicken breasts with the mixture and let them marinate for at least 30 minutes.

    Grill the Chicken: Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

      Grill the Peaches: While the chicken is resting, place the peach halves cut-side down on the grill. Grill for about 3-4 minutes until they have nice grill marks and are slightly softened. Remove from the grill and let them cool a bit.

        Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, honey, and remaining 1 tablespoon of olive oil. Season with salt and pepper to taste.

          Assemble the Salad: In a large salad bowl, combine mixed salad greens, cherry tomatoes, sliced red onion, and toasted walnuts. Toss well to mix the ingredients.

            Slice and Add Chicken: Slice the grilled chicken and add it to the salad mixture. Gently fold in the grilled peach halves and sprinkle with crumbled feta cheese.

              Dress the Salad: Drizzle the balsamic dressing over the salad and toss everything together gently.
