8 oz (225g) pasta (penne or fusilli)

2 boneless, skinless chicken breasts

2 tablespoons olive oil, divided

Salt and pepper, to taste

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

2 cloves garlic, minced

¼ cup fresh basil, chopped

1 tablespoon balsamic vinegar

½ cup mozzarella cheese, cubed

Parmesan cheese, for serving

Optional: red pepper flakes for heat

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Grill the Chicken: While the pasta cooks, preheat your grill or grill pan over medium-high heat. Rub the chicken breasts with 1 tablespoon of olive oil, and season with salt, pepper, and Italian seasoning. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing into strips.

      Sauté the Tomatoes: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for about 3-4 minutes, until they soften.

        Combine Ingredients: Add the cooked pasta to the skillet with the tomatoes. Stir in chopped basil, balsamic vinegar, and mozzarella cheese.
