Grilled Chicken and Peach Skewers

1 lb chicken breast, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into quarters

3 tbsp olive oil

2 tbsp honey

2 tbsp soy sauce

1 tsp garlic powder

1 tsp ground ginger

1 tsp smoked paprika

Salt and pepper, to taste

Fresh basil or cilantro, for garnish

Skewers (if using wooden skewers, soak them in water for 30 minutes prior)

Instructions
 

Prepare the Marinade: In a bowl, whisk together olive oil, honey, soy sauce, garlic powder, ground ginger, smoked paprika, salt, and pepper. Reserve a couple of tablespoons for brushing later.

    Marinate the Chicken: Add the chicken cubes to the marinade and let them sit for at least 30 minutes in the refrigerator, or up to 2 hours for more flavor.

      Skewer Ingredients: Thread the marinated chicken, peach wedges, red bell pepper pieces, and onion quarters onto the skewers. Alternate between chicken and veggies/fruits for a colorful presentation.

        Preheat the Grill: Get your grill hot and prepped for grilling. If using a grill pan, heat over medium-high heat.

          Grill the Skewers: Place the skewers on the grill. Cook for 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks, brushing with the reserved marinade halfway through cooking.

            Check for Doneness: Make sure the chicken reaches an internal temperature of 165°F (75°C).

              Serve: Once done, remove the skewers from the grill, let them rest for a few minutes, then garnish with freshly picked basil or cilantro. Serve hot and enjoy the blend of sweet peaches and savory chicken.
