Grilled Cheese Sandwich

Ingredients
  

4 slices of sourdough bread

2 tablespoons of unsalted butter, softened

1 cup sharp cheddar cheese, grated

1/2 cup Gruyère cheese, grated

1/4 cup cream cheese, softened

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon fresh chives, chopped (optional)

Salt and pepper to taste

Prepare the Cheese Mixture: In a medium bowl, combine the sharp cheddar, Gruyère, cream cheese, Dijon mustard, garlic powder, and fresh chives (if using). Stir until well blended and set aside.

    Butter the Bread: Spread a generous layer of softened butter on one side of each slice of sourdough bread. This will give the sandwich a deliciously golden and crispy exterior.

      Assemble the Sandwich: Place two slices of bread, buttered side down, on a clean surface. Divide the cheese mixture evenly between the two slices of bread. Top with the remaining slices of sourdough, buttered side up.

        Preheat the Grill: Heat a non-stick skillet or griddle over medium heat. Once hot, place the assembled sandwiches in the skillet.

          Grill the Sandwiches: Cook the sandwiches for about 4-5 minutes or until the bottom is golden brown. Carefully flip the sandwiches and grill the other side for another 4-5 minutes, pressing down slightly with a spatula to ensure even cooking.

            Melt and Flip: To ensure the cheese melts perfectly, you can lower the heat and cover the skillet with a lid for 1-2 minutes while grilling the second side.

              Check Doneness: Once both sides are crispy and golden brown, and the cheese is melted, remove the sandwiches from the skillet.

                Serve: Let the sandwiches rest for a minute, then slice them diagonally and serve hot, optionally garnished with extra chives or a side of tomato soup for dipping.
