Ingredients

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1-2 green chilies, finely chopped (adjust for spice level)

6 large eggs

1/4 cup milk (or a non-dairy alternative)

1/2 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Sauté the Sweet Potatoes: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until they begin to soften.

Add Aromatics: Add the chopped onion, garlic, and green chilies to the skillet. Sauté for another 5 minutes, until the onion is translucent and the sweet potatoes are tender. Season with salt and pepper to taste.

Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper. Stir in the shredded cheddar cheese.

Combine Everything: Pour the egg mixture over the vegetables in the skillet, ensuring everything is evenly distributed.

Bake the Frittata: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is slightly golden.

Cool and Garnish: Once cooked, remove the frittata from the oven and let it cool for a few minutes. Garnish with freshly chopped cilantro before slicing.

Serve: Cut into wedges and serve warm or at room temperature.
