Green Chili Cornbread Muffin Bites

Ingredients
  

1 cup cornmeal

1 cup all-purpose flour

1/4 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/4 cup unsalted butter, melted

2 large eggs

1 cup diced green chilies (fresh or canned, drained)

1 cup shredded cheddar cheese

Optional: 1/4 cup chopped fresh cilantro for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a mini muffin tin or line it with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix together the milk, melted butter, and eggs until fully incorporated.

        Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

          Add Chilies and Cheese: Fold in the diced green chilies and shredded cheddar cheese until evenly dispersed throughout the batter.

            Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for about 12-15 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Garnish: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. Optionally, sprinkle with chopped fresh cilantro for a pop of color.

                  Serve: Enjoy warm or at room temperature, perfect for snacks, appetizers, or alongside your main courses.
