Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/2 cup cooked and crumbled bacon (about 4-5 slices)

1/2 cup diced green chiles (canned, drained)

3/4 cup buttermilk

1 tablespoon chopped fresh chives (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and onion powder until well combined.

Cut in Butter: Add the cold cubed butter to the dry mixture. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.

Add Cheese, Bacon, and Chiles: Stir in the shredded cheddar cheese, crumbled bacon, and diced green chiles until evenly distributed.

Incorporate Buttermilk: Pour in the buttermilk and gently stir with a fork until just combined. Be careful not to overmix; the dough should be slightly sticky but manageable.

Form the Biscuits: Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick. Cut into squares or use a biscuit cutter to make rounds. Place the biscuits onto the prepared baking sheet.

Bake: Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown and fluffy.

Cool & Garnish: Remove from the oven and let the biscuits cool for a few minutes on the baking sheet. If desired, sprinkle with fresh chives before serving.

Serve: Enjoy warm, either plain or with butter and a drizzle of honey for a sweet offset to the savory bacon and chiles.
