Ingredients
  

2 large ripe tomatoes, diced

1 cucumber, peeled and sliced into half-moons

1 red bell pepper, chopped

1 small red onion, thinly sliced

1 cup Kalamata olives, pitted

1 cup feta cheese, crumbled or cubed

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the diced tomatoes, cucumber slices, chopped red bell pepper, thinly sliced red onion, and Kalamata olives.

    Add the crumbled feta cheese on top of the vegetable mixture.

      In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Drizzle the dressing over the salad, tossing gently to avoid breaking up the feta too much.

          Adjust seasoning to taste, adding more salt, pepper, or vinegar if desired.

            Garnish with chopped fresh parsley.

              Serve immediately as a refreshing side dish or a light main course!
