Greek Pasta Salad with Tzatziki Dressing

8 oz. rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh oregano, chopped (or 1 tbsp dried)

For the Tzatziki Dressing:

1 cup Greek yogurt

1 small cucumber, finely grated and excess moisture squeezed out

2 cloves garlic, minced

1 tbsp lemon juice

1 tbsp olive oil

Salt and pepper to taste

Fresh dill, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini or fusilli according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Tzatziki Dressing: In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper. Mix well until creamy. Taste and adjust seasoning as needed. Set aside in the refrigerator to develop flavors.

      Combine Salad Ingredients: In a large mixing bowl, add the cooked pasta, cherry tomatoes, diced cucumber, red onion, Kalamata olives, feta cheese, chopped parsley, and oregano. Gently toss to combine all the ingredients.

        Dress the Salad: Pour the Tzatziki dressing over the pasta salad and gently toss until evenly coated.

          Chill: Cover the salad and place it in the refrigerator for at least 30 minutes to let the flavors meld.
