Greek Chicken Orzo Skillet

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 can (14 oz) diced tomatoes, drained

1 cup chicken broth

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

Juice of 1 lemon

1/2 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken thighs and cook for about 5-7 minutes or until they are browned and cooked through. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the onions and garlic. Sauté for about 2-3 minutes until the onions become translucent. Add in the red bell pepper and zucchini, cooking for another 3-4 minutes until they soften.

      Cook the Orzo: Stir in the orzo pasta, mixing well with the vegetables. Pour in the diced tomatoes and chicken broth, then add the dried oregano, thyme, salt, and pepper. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low and cover the skillet. Let it simmer for about 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.

          Combine and Finish: Return the cooked chicken to the skillet along with the lemon juice and spinach. Stir until the spinach is wilted, about 1-2 minutes. Remove from heat and gently fold in the crumbled feta cheese.

            Serve: Garnish with fresh parsley and serve warm. Enjoy your Mediterranean-inspired dish!
