1 medium head of cauliflower, cut into florets

3 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1/2 cup fresh cilantro, chopped

1 lime, juiced

1 avocado, sliced

1/2 cup feta cheese, crumbled (optional)

Hot sauce, to taste (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a mixing bowl, combine the cauliflower florets with olive oil, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss well until the cauliflower is evenly coated.

      Roast the Cauliflower: Spread the seasoned cauliflower on a baking sheet lined with parchment paper in a single layer. Roast for 25-30 minutes, stirring halfway through, until the cauliflower is golden and tender.

        Warm the Tortillas: While the cauliflower is roasting, warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or until soft and pliable.

          Prepare the Toppings: In a small bowl, mix the shredded red cabbage with chopped cilantro and lime juice. Season with a pinch of salt and pepper.
