Ingredients

2 chicken breasts, diced

2 tablespoons ginger, minced

3 cloves garlic, minced

3/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

1 tablespoon olive oil

4 cups chicken broth

2 packs of instant ramen noodles (discard the seasoning packets)

1 cup broccoli florets

1 cup sliced carrots

1 cup snap peas

1/2 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Preheat Your Oven: Preheat your oven to 375°F (190°C).

Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, ginger, and garlic. Cook until the chicken is brown and cooked through (about 5-7 minutes). Season with salt and pepper.

Add Teriyaki Sauce: Pour the teriyaki sauce and sesame oil over the cooked chicken, stirring to coat the pieces evenly. Allow it to simmer for about 2-3 minutes until slightly thickened. Remove from heat and set aside.

Cook Ramen Noodles: In a large pot, bring the chicken broth to a boil. Add the instant ramen noodles and cook for 2-3 minutes, or just until they begin to soften (do not overcook, as they will cook further in the bake). Drain the noodles and set aside.

Mix Vegetables: In the same pot with the chicken broth, add broccoli, carrots, and snap peas. Stir and let them simmer for about 3-4 minutes until they just begin to soften. Remove from heat and drain excess liquid.

Combine Ingredients: In a large mixing bowl, combine the cooked chicken and teriyaki mixture, softened ramen noodles, and the sautéed vegetables. Mix well until everything is evenly coated with the sauce.

Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

Bake: Bake in the preheated oven for about 20-25 minutes, until the edges are bubbly and slightly golden.

Garnish: Remove from the oven and let it cool for a few minutes. Before serving, top with chopped green onions and sesame seeds for added crunch and flavor.

Serve: Dish out portions and enjoy your delicious Ginger Teriyaki Chicken Ramen Bake!
