Garlic Lemon Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and black pepper to taste

4 whole wheat wraps or tortillas

1 cup fresh spinach leaves

1 cup diced cucumber

1 cup cherry tomatoes, halved

½ cup red onion, thinly sliced

½ cup crumbled feta cheese (optional)

Fresh parsley, chopped (for garnish)

Prepare the Chickpeas: In a medium bowl, mash the chickpeas lightly with a fork or potato masher, keeping some whole for texture.

    Sauté the Garlic: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes, or until fragrant and golden. Be careful not to burn the garlic.
