12 oz (340g) spaghetti or linguine

1 large head of broccoli, cut into florets

4 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil or parsley, for garnish

Optional: toasted pine nuts or walnuts for crunch

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Blanch the Broccoli: In the same pot, bring the water back to a boil and add the broccoli florets. Blanch for about 2-3 minutes until bright green and tender-crisp. Drain and set aside. (You can also shock the broccoli in ice water for a vibrant color if desired.)

      Make the Garlic Lemon Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, making sure the garlic does not burn.
