2 cups broccoli florets

2 cups cauliflower florets

1 cup baby carrots

1 red bell pepper, sliced

1 zucchini, sliced

1 red onion, chopped

8 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Veggies: In a large mixing bowl, combine the broccoli, cauliflower, carrots, red bell pepper, zucchini, and red onion.

      Make Garlic Herb Mixture: In a small bowl, whisk together the minced garlic, olive oil, balsamic vinegar, dried thyme, dried rosemary, dried oregano, salt, and black pepper.

        Combine Ingredients: Pour the garlic herb mixture over the prepared vegetables. Toss everything together until the veggies are evenly coated with the mixture.
